Long before distillation reached Mexico, there was pulque: the fermented sap of the maguey agave, milky and faintly viscous, gently alcoholic and drunk from Teotihuacan's day onward - sacred to the gods of the maguey, restricted under Aztec law, and for centuries afterward the everyday drink of the central highlands. The aguamiel is drawn daily from the heart of a mature plant, ferments in hours, and does not keep - which is why pulque never traveled and beer nearly killed it. The pulqueria, its natural habitat, survives as one of Mexico City's great institutions: sawdust-era taverns with swinging doors, murals and formica, where pulque comes natural or as curados blended with guava, oat, celery, mango or tomato, ladled from barrels into liter mugs. A younger generation has adopted the old rooms and opened new ones, keeping the tradition unmistakably alive. It tastes like nothing else - tart, vegetal, alive - and a first curado in a hundred-year-old salon is a rite of passage.

Afternoons any day - pulque is a daylight drink and the freshest barrels pour early. Sundays fill the classic rooms with families and dominoes.
Honest expectations
The texture surprises first-timers - slightly slippery is correct, sour-off is not; busy houses turn barrels fastest. Start with a curado if natural pulque proves challenging. Traditional rooms are cash-only and acoustically merciless.
