Lambanog

Lambanog starts as tuba, the sap tapped from the cut flower stalk of the coconut palm by climbers who go up the trunks twice a day. Left to ferment it becomes a mild palm wine; distilled, it becomes lambanog, a clear spirit that traditionally ran to forty-five percent and above and is the everyday drink of the Quezon coconut belt. It is drunk neat, and the custom at a table is a single glass and a tanggero who pours and passes it round, each person drinking in turn - a practice that says something about how the drink is understood socially. Commercial distilleries around Tayabas and Candelaria now bottle flavoured and standardised versions for the wider market. The safety point is worth stating plainly: methanol poisoning from improperly distilled homemade batches has caused deaths in the Philippines, including a cluster in Quezon in 2019, so buy sealed bottles from licensed distilleries rather than unlabelled containers.

Buy sealed, labelled bottles from licensed distilleries - unlabelled homemade lambanog has caused methanol poisonings, including fatal ones. It is strong, typically well above forty percent. The shared-glass custom is normal here; decline politely if you would rather not.
