Volos Tsipouradika

Volos does one thing that no other Greek city does at this scale. You order tsipouro, the grape spirit, and it comes in a small bottle with a plate of food attached to it, chosen by the kitchen rather than you. Order a second bottle and a different plate arrives. The sequence usually starts light, with a bean salad or a piece of cheese, then works through marinated anchovies, small fried fish, grilled octopus and something meaty like spetzofai, the Pelion dish of sausage and peppers. You choose only whether the tsipouro comes with anise or without. The rhythm sets the pace, and afternoons here run long.

When to go

Lunchtime through late afternoon is the real hour here, which surprises visitors expecting a dinner culture; many places are busiest between two and six. Weekends fill early. Winter suits it as well as summer, since the waterfront places are enclosed and the food leans hot and fried. Sunday afternoons are the local institution and the hardest time to get a table.

Honest expectations

Portions are small by design and the bill climbs quietly across four or five rounds. Rooms are loud, often smoky in practice, and the crowd is overwhelmingly Greek-speaking with menus that may not exist in any language. The spirit is strong and paced for people who eat while they drink. Vegetarians get a thin selection, and the automatic plates mean you cannot really steer what arrives.
