The Milk Bar

The bar mleczny is a canteen that serves the food people cook at home: pierogi, barszcz and zurek, potato pancakes, breaded cutlets, stewed fruit compote, all at prices that have stayed deliberately low. The name comes from the dairy-based menus of the earliest ones, opened in the 1890s by a dairy owner selling milk dishes to workers. The format has outlasted every change around it, and the surviving bars run the same way they always did: read the board, pay at the till, take the ticket to the hatch, carry your own tray, return it yourself.

What to look for

• The board menu - handwritten or printed, in Polish, changing daily.
• The counter system - pay first at the till, then collect from the hatch.
• The classics - pierogi, zurek, nalesniki, kotlet schabowy, kompot.
• The room - formica, tiles and shared tables, unchanged for decades.

When to go

Year-round, and at lunchtime, which is when the turnover is fastest and the food freshest. Many close by early evening and some by mid-afternoon; almost none open late. Weekdays are busier and better than weekends.

Before you go

The menu is in Polish only in most of them, and the queue moves fast enough that hesitating is awkward - photograph the board and translate it before you reach the till. Service is brisk rather than warm. Tables are shared, cutlery is basic and you clear your own tray. This is cheap, plain food, not a culinary experience.
