Sajji is the defining dish of Balochistan and it is defined by restraint: the meat, traditionally a whole lamb or a leg, sometimes chicken, is rubbed with salt and nothing else, skewered on a long spit, and stood in a ring around an open wood fire to roast slowly by radiant heat rather than over flames, turned as it goes. No spice rub, no marinade, no sauce during cooking; the flavour comes from the salt, the smoke and the fat rendering through the meat over an hour or more. It is served on a platter with kaak, a hard bread baked on hot stones, or with rice cooked in the drippings, and often with a squeeze of lemon and a green chutney on the side. In Quetta, sajji houses range from formal restaurants to roadside pits, and the ring of upright spits around a fire outside is the sign.
