The torta ahogada depends entirely on its bread. Birote salado is a Guadalajara peculiarity - a sourdough-leavened, salt-crusted roll that local bakers insist cannot be reproduced elsewhere because of the city's altitude, water and resident wild yeasts - and its hard crust is the only thing that survives what happens next. The roll is split, packed with carnitas pork, and then drowned: ladled with a thin, mild tomato sauce until the sandwich sits in a lake of it, with pickled onion on top. The second sauce is the test - a fiery chile de arbol salsa applied by degrees, from "media" to "bien ahogada," at which point the whole torta is submerged in the hot one and the eater commits. Service comes in a plastic-lined bowl with a spoon, and the technique - lift, tilt, bite fast, mop with the crust - is a local skill acquired in childhood. Stands run from dawn carts to famous shops with decades of queues, and the sandwich carries the same hangover-cure reputation as birria, with which it competes for Sunday mornings.
