Raicilla

Raicilla is what western Jalisco drank while the rest of the country drank tequila. Distilled from mountain agaves - lechuguilla and maximiliana chief among them - in tabernas scattered through the sierra behind Puerto Vallarta, it was produced for generations outside the formal system: taxed, banned or ignored by turns, and traded under the counter, which gave it a reputation as moonshine. In recent years it has come in from the cold, gaining a denomination of origin and a growing following among drinkers who find its profile - herbal, earthy, sometimes fruity, less smoky than most mezcal because agaves are often cooked above ground rather than in pit ovens - a distinct third voice alongside tequila and mezcal. Visits work as a sierra day: the road climbs from the coast through cloud forest to San Sebastian del Oeste, a silver-mining pueblo magico of white walls and cobbles, and to Mascota's valley, with tabernas along the way where families show the fermentation vats, the copper or clay stills, and pour flights that start smooth and end assertive.

Honest expectations

Strength varies widely between batches - small pours, and never drive after tasting. Tabernas are farm operations, not visitor centres; call ahead or go with a guide. Bottles for export need proper labels; buy from producers with paperwork.
