Every Yucatecan breakfast menu carries huevos motulenos, but the dish has a hometown and the hometown has a market. In Motul, east of Merida, the second floor of the municipal market holds the loncherias - Dona Evelia's foremost among them, griddles roaring since dawn - where the layered construction is assembled with assembly-line grace: a crisp-fried tortilla spread with black bean paste, two fried eggs, a second tortilla if you order them "double-decker," then the ladle of light tomato sauce, and the shower that makes the dish - green peas, diced ham, crumbled salty cheese and coins of fried sweet plantain, with habanero on the side for the brave. Legend credits a Motul cook improvising for a visiting statesman a century ago; the market has been serving pilgrims, workers and road-trippers ever since, with plastic stools, fresh-squeezed orange juice and total confidence. Versions across Mexico add or subtract, but eating the original where it was invented - loud, fast, generous - is one of Yucatan's best cheap thrills.
