The marquesita is proof that Yucatan can improve even its own inventions hourly. Born in Merida - credited to ice-cream maker Leopoldo Mena around 1938, who needed a cold-season product and pressed crepe batter in a waffle iron for the daughters of a marquis, hence the name - it is a thin crepe cooked crisp on a two-plate iron, rolled hot into a tube, and filled while pliable. The canonical filling stops outsiders cold: queso de bola - shredded Edam, the Dutch cheese Yucatan adopted through Caribbean trade - either alone or, in the definitive version, paired with Nutella or cajeta, the salty cheese cutting the sweetness into balance. Orders call across evening plazas - "con queso y Nutella!" - as cart vendors ladle, spin the iron, roll the tube in wax paper and hand over something between crepe, waffle and cigar that shatters at the first bite. Every zocalo from Merida to the coast keeps its carts; the queue after church on Sunday evenings is the institution at prayer.
