The flatlands between Parma and Modena are Italy's food valley, and its two monuments are best met at the source. Parmigiano-Reggiano is made every morning of the year, and dairy tours run at dawn to catch it: copper cauldrons of milk, curd cut and gathered by hand, wheels pressed and branded, then the cathedral hush of the ageing warehouse - thousands of forty-kilo wheels racked to the ceiling, maturing one, two, three years or more while inspectors tap them like pianos for hidden flaws. Traditional balsamic vinegar of Modena and Reggio Emilia is the slower miracle - cooked grape must aged through batteries of ever-smaller wooden barrels in family attics, a minimum of twelve years for the DOP seal and twenty-five for extravecchio, emerging as a dense, sweet-sour glaze sold in tiny bulbs and spooned, not poured. Together they make the region's best day of edible pilgrimage.

When to go
Production runs daily year-round, so any season works - but dairy visits start early, often before 9, and both dairies and acetaie require booking days ahead. Autumn adds grape harvest and must-cooking to the acetaia story.
Honest expectations
This is appointment tourism - turning up unannounced gets you a locked gate. Real traditional balsamic costs serious money for tiny bottles; the supermarket 'balsamic of Modena' is a different, industrial product, which the producers will explain with feeling. Distances between producers make a car near-essential.
