Kampot pepper was the standard in French kitchens before the twentieth century's wars and the Khmer Rouge years destroyed the plantations almost completely, and its recovery since the 2000s is one of Cambodia's quieter success stories. It now carries a protected geographical indication, tying the name to a defined area of Kampot and Kep where the quartz-rich soil and the sea air are credited with the flavour. On the farms, vines climb wooden poles in neat rows, and the same plant yields several products depending on picking and processing: green pepper picked fresh and used on the stem, black pepper dried from unripe berries, red from fully ripe fruit, and white from red berries with the skin removed. Tastings run through them in order, and the differences are more obvious than most people expect.

When to go
The harvest season, roughly February to May, is when the farms are at their most interesting and fresh green pepper is available. Farms welcome visitors year-round but outside harvest the vines are quiet.
Honest expectations
Genuine Kampot pepper is expensive and widely counterfeited; the protected designation exists precisely because the name is worth copying. Buy from a farm or a shop that can show the certification rather than from a market stall. Some farm tours are perfunctory sales stops, so it is worth asking whether you actually walk the plantation.
