The Callwood distillery sits in the valley behind Cane Garden Bay in a stone building that has been making rum from local cane since around the eighteenth century, worked by the Callwood family for generations. It is small and entirely unmodernised: a copper pot still, wooden vats, and the same process run at a scale that would not register anywhere else. The rum is sold from the building. There is no marketing operation of any kind.

When to go
December to May is the season. Cane crushing is seasonal and the still is not always running. Opening is informal and depends on someone being there.

Opening is informal and the distillery is sometimes shut with nobody about. Distilling is seasonal and often not in progress. The rum is very strong and rough.
