Thrace is the flattest and most agricultural corner of the country, and sunflowers are its signature crop - Turkey is among the larger producers of sunflower oil, and most of the seed comes from these provinces. For a few weeks in July the whole landscape between Edirne, Uzunköprü, Havsa and Malkara turns yellow: fields running to the horizon under a very wide sky, all the heads facing the same way, broken by lines of poplar and the occasional Ottoman bridge or minaret. There is nothing organised about it - no viewpoint, no visitor centre, no signposted route - which is the appeal for photographers, who simply drive the secondary roads and stop. Beekeepers set hives along the field edges and sell sunflower honey from the roadside. The window is short: the fields are cut for oil by late summer and what is left is stubble, so the timing matters more than the route.

When to go

There is no infrastructure at all: no signs, viewpoints or facilities, and a car is essential. The fields are private property - photograph from the roadside and do not walk into the crop.
