Tajik cuisine is hearty, warming Central Asian and Persian-influenced food, shaped by the Silk Road and the mountains, built on meat, rice, noodles, dairy and bread. The national dish is osh, or plov, a rich pilaf of rice, lamb, carrots and onions cooked in a single great cauldron for gatherings. Uniquely Tajik is qurutob, the national comfort food, torn flaky flatbread soaked in a tangy sauce of dried-yoghurt qurut and topped with onions and herbs, eaten communally by hand. Hand-pulled laghman noodles, samsa pastries and round non bread complete the table.

What you actually see

  • Osh (plov) - the national rice, lamb and carrot pilaf.
  • Qurutob - the beloved flatbread-and-yoghurt national dish.
  • Laghman and manti - the hand-pulled noodles and dumplings.
  • Non bread and samsa - the round flatbread and baked pastries.

When to go

Year-round; the traditional chaikhana, or teahouse, is the heart of Tajik dining and social life, where osh, qurutob and endless pots of green tea are shared, often on raised platforms spread with cushions. A meal in a home reveals the country's legendary hospitality, with guests honoured generously.

Honest expectations

Tajik food is meat-, rice- and dough-heavy, hearty rather than varied or richly spiced, so it is warming comfort food rather than delicate cuisine, and vegetarian options can be limited beyond bread, dairy and vegetables. Bread, or non, is sacred and treated with great respect. Shared communally in a chaikhana with green tea and warm hospitality, though, dishes like osh and qurutob are a genuine, satisfying taste of Central Asia.
