Maxwell Food Centre

Maxwell Food Centre occupies a 1928 market building converted to hawker stalls in the 1980s, about a hundred of them, and it sits at the edge of Chinatown where the office district begins. Tian Tian Hainanese Chicken Rice is the stall everyone queues for, but the centre is also strong in porridge, fishball noodles and Hokkien mee. Hawker culture in Singapore was inscribed by UNESCO in 2020, and this is one of the centres that made the case.

History

Maxwell Market was built on a Chinese burial ground for S$115,021 and opened on 17 November 1928, and after a five-month renovation it reopened as Maxwell Road Food Centre on 16 March 1987 with 70 hawkers moved from China Square (Wikipedia, Maxwell Food Centre).

What to look for

• Tian Tian chicken rice - the stall with the permanent queue.
• The stall range - around a hundred stalls including porridge and fishball noodles.
• The 1928 building - a converted market hall at the Chinatown edge.
• The lunch rush - office workers filling the centre from noon.

When to go

Year round; lunchtime is the busiest and many stalls close by mid-afternoon. Some of the best stalls sell out. Evenings are quieter with fewer stalls open.

What to expect

The famous chicken rice queue can take forty minutes and locals argue the neighbouring stalls are as good. Seats at lunch are hard to find and chope culture applies: a packet of tissues on a seat means it is taken. Many stalls close on different days.
