Fond Doux has grown cocoa since the 1740s and still does, on around a hundred and thirty-five acres in the valley behind the Pitons, and the tour follows a pod from the tree to a cup of chocolate: cutting, fermenting under banana leaves, drying on sliding trays that roll under cover when it rains, roasting, and grinding on a stone. The cocoa is dried and polished by foot in the traditional way. Trails run up through the estate to a viewpoint below Petit Piton. Colonial-era cottages on the property have been restored, some as accommodation, and the gardens around them are heavily planted.

When to go

December to April is the dry season. Tours run through the day and end with chocolate made from the estate's own beans. Mornings avoid the cruise groups. The main harvest runs through the year with peaks that vary.

Honest expectations

It is a commercial operation and the demonstration is arranged for visitors, though the estate genuinely produces. Cruise excursions fill it midday. Entry and the various add-ons mount up. The road in is steep and narrow. The plantation's origins in enslaved labour are mentioned but not dwelt on.
