Coffee here is scheduled rather than continuous. Koffietijd falls mid-morning and again around three, and the offer is a cup with something small beside it, traditionally exactly one biscuit, which the Dutch joke about and then continue to do. Koffie verkeerd is the milky version, literally coffee the wrong way round. The classic partner is appeltaart, a deep pastry case of apple, cinnamon and sultanas served with a heap of unsweetened whipped cream that is not optional. Alongside that sits a newer layer of city roasteries doing single-origin filter, and the old brown-panelled cafes where the coffee is weaker and the point is sitting down.

When to go
Any time of day, though mid-morning and mid-afternoon are when the habit is visible in every cafe at once. Bakeries put out tart from opening and the good ones sell out by afternoon. Independents in the smaller towns often open late on Sundays and some close Mondays entirely.
Honest expectations
Filter coffee in traditional places is weak and the cups are small, and free refills are not a thing here. Appeltaart portions are enormous and, outside a decent bakery, often dry. Speciality roasteries charge city prices and the good ones are packed with laptops. Milk is routinely scalded, so a flat white can arrive bitter.
