Fes Blue Pottery and Zellij

Fes has made pottery for a thousand years and its signature is a deep cobalt blue painted on white glaze, drawn freehand in bands of geometry and stylised flowers. The workshops moved out of the medina to Ain Nokbi, where kilns fired with olive pits stand in yards behind the showrooms, and the whole sequence is visible in one visit: grey clay from the hills mixed and wedged, thrown on a foot-driven wheel, dried in the sun, glazed, painted and fired. The same yards produce zellij, the mosaic tilework of Moroccan architecture, which is not cut but chipped: a craftsman holds a glazed tile against a block and knocks it into a star or a lozenge with a sharpened hammer, entirely by eye, hundreds of times a day.

What you actually see

• The wheels - potters throwing tagines and bowls on foot-driven wheels.
• The painters - cobalt patterns drawn freehand, without stencils or transfers.
• The zellij chippers - glazed tiles knocked into geometric shapes by hammer and eye.
• The kilns - beehive kilns fired with olive pits, stacked and sealed by hand.

When to go

Weekday mornings, when all the stages are running at once; work thins out in the afternoon and on Fridays. Any season works since most of the process is under cover, though the yards are hot in summer and the drying racks empty in winter rain. No booking is needed.

Honest expectations

Every workshop tour ends in a showroom and the pressure to buy is real, with prices that start high for visitors arriving by taxi. Some quarters are dusty, noisy and not tidied for visitors, which is honest but not scenic. Cheap pottery sold in the medina as Fes blue is often imported and painted with transfers; the difference is visible in the brushwork.
