Sotol is not made from agave. The plant - Dasylirion, the desert spoon - is a spiky rosette of the arid north that takes about fifteen years to mature and, unlike cultivated agave, is still mostly harvested wild from sierra and desert slopes. The process resembles mezcal's: hearts are cut, roasted in earth pits with wood and hot rock for days, crushed, fermented in open vats with wild yeasts, and distilled twice in small copper or clay stills at family vinatas, many of them the same operations that survived prohibition-era bans and decades of obscurity. The result is drier and greener than mezcal, with herbal, mineral and sometimes smoky notes that shift with the plant's terrain - sierra sotol tastes different from desert sotol, and producers say so proudly. Chihuahua, Coahuila and Durango hold the denomination of origin, and a new generation of bottlers has taken the spirit from regional staple to cocktail lists abroad. Tasting rooms in Chihuahua city and vinata visits in the countryside both work; sipping neat, at room temperature, is how it is done.
