Yucatecan cooking developed apart from central Mexico, drawing on Maya technique with later Lebanese and Caribbean influence, and it uses ingredients you rarely meet elsewhere: achiote seed for its earthy red colour, bitter sour orange, epazote, and the habanero that arrives on the side rather than in the dish. Cochinita pibil is its emblem, pork rubbed with achiote paste and sour orange, wrapped in banana leaves and cooked slowly in a pib, an earth oven, until it falls apart, then eaten in tacos or tortas with pickled red onion. It is traditionally a Sunday morning food and stands sell out by noon. Around it sit sopa de lima, panuchos, salbutes, papadzules and relleno negro.

When to go

Year-round. Cochinita is a morning food and the good stands are done by early afternoon, so eat it at breakfast rather than dinner. Sunday is the traditional day and the busiest. Mérida's markets and the Santa Ana area are the easiest starting points.

Honest expectations

The best cochinita comes from stands that open at dawn and close when the pig is gone, so restaurant versions served at dinner are usually reheated. Habanero is very hot and is added by the eater, so taste before spooning. Vegetarians find Yucatecan menus narrow, though papadzules, made with pumpkin seed and egg, are a genuine exception.
