The Limfjord cuts across the top of Jutland from the North Sea to the Kattegat, and its brackish, shallow water holds one of the last significant wild populations of the European flat oyster, the native species that has collapsed almost everywhere else. They are dredged and hand-gathered from autumn through early spring, when cold water makes them firm. Guided oyster safaris wade out at low tide to find them on the bed, and the standard finish is to open them on the shore and eat them raw with nothing but their own liquor. An oyster festival runs on the island of Mors in autumn.

When to go

October to April is the season, and the safaris run in the cold half of the year because that is when the oysters are worth eating. Low tide dictates the timing, so trips are set by the tide table rather than the clock. Book ahead, since groups are small and winter departures are limited.

Honest expectations

You will be standing in cold water in borrowed waders in a Danish winter, and the wind off the fjord is relentless. Trips are cancelled for weather at short notice. The flat oyster has a strong metallic taste that not everyone likes, and it is expensive. Without a car this stretch of Jutland is hard to reach at all.
