Safranbolu

Safranbolu is the Ottoman town the centuries forgot to modernise - a caravan station on the east-west trade route from the 13th century until the railways, its wealth banked in some 800 preserved timber-framed konak mansions stacked along cobbled ravine streets, whitewash and dark wood under red tile. UNESCO listed the old town in 1994 as an outstandingly preserved Ottoman merchant town, and its 17th-century heyday once set architectural fashion across much of the empire. The name comes from saffron, still grown in surrounding villages and sold - along with lokum, Turkish delight at its softest - in the bazaar lanes around the 17th-century Cinci Hani caravanserai. Many mansions now serve as house-museums, guesthouses and cafes; from Hidirlik Hill the whole red-roofed composition folds into its valley like a scale model of a vanished world.

When to go

Spring and autumn are ideal; summer weekends bring heavy domestic crowds, so aim for weekdays or stay overnight - the town is loveliest after the day-trippers leave. Snow on the rooftops makes winter quietly magical.

Honest expectations

Real saffron is expensive - suspiciously cheap packets are usually safflower. Streets are steep, cobbled and slippery in rain. Sleeping in a konak guesthouse is the point of coming, but rooms run creaky-authentic rather than plush.
