Kvaefjordkake is a sponge base spread with meringue and flaked almonds, baked together so the meringue crisps on top, then split and filled with vanilla cream. Its other name, verdens beste, the world's best, is the one most Norwegians use, and a national vote in 2002 confirmed it as the country's national cake. The origin is claimed by Kvaefjord in Troms, where a local baker is credited with the recipe in the early twentieth century, though the details are disputed and similar cakes exist in Denmark and Sweden. It appears at confirmations, birthdays and 17 May, and every family has an opinion about the ratio of cream to meringue.
