Swabian cooking is built on flour, eggs and thrift. Spatzle are made by spreading a loose egg dough on a wooden board and scraping ragged strips off the edge into boiling water; they come plain beside a roast, or layered with grated cheese and dark fried onions as Kasspatzle. Maultaschen are the other pillar, squares of pasta filled with minced meat, spinach, onion and breadcrumbs, roughly the size of a palm. They are eaten two ways, floating in clear beef broth or sliced and fried with onion beside potato salad. The nickname Herrgottsbscheisserle, roughly little God-cheaters, comes from the story that the filling was hidden inside dough during Lent.

When to go
Available all year, but this is cold-weather food and it lands better from October onwards. Village kitchens across the Alb keep short hours, often serving lunch then closing until evening, and many shut one day midweek. Maultaschen turn up everywhere around Lent, which is also when the story behind their name gets told most often.
Honest expectations
It is heavy, beige food, and two courses will finish your afternoon. Restaurant Spatzle are often pressed rather than scraped, which gives a blander, more uniform noodle. Vegetarian Maultaschen exist but are an afterthought in traditional kitchens. Portions are large, the sides are starchy, and salad usually means a small bowl of dressed shredded root vegetables.
