Halfway up Santiago's mountainous spine, Assomada is where the island's farming interior comes to trade - and on the main market days its centre disappears under commerce: pyramids of papaya, mango and sugarcane from the green valleys, sacks of maize and beans for the national cachupa pot, squealing piglets, bolts of cloth, and grogue - the sugarcane spirit - sold from recycled bottles with vintages argued over like wine. This is the heartland of Badiu culture, Santiago's deepest African current, and the market is its weekly parliament. The covered halls trade daily; the streets around them erupt on the main days.
