Quebec produces the large majority of the world's maple syrup, and the season is short and specific: in March and April, when nights are still freezing and days rise above zero, pressure changes push sap up the sugar maples and it can be tapped. It takes roughly forty litres of sap to make one of syrup, boiled down over hours in an evaporator, and the smell of a boiling shack is unmistakable. The cabane Ă  sucre is the social side of it, a rural hall where families eat a set spring meal of pea soup, ham, baked beans, omelette, pork rinds and pancakes, all with syrup, followed by tire sur la neige, hot syrup poured in ribbons onto clean snow and rolled onto a stick as it sets into taffy.

When to go

March and April only; the season depends on the freeze-thaw cycle and lasts a few weeks, shifting earlier or later with the year. Sugar shacks book out at weekends, so reserve. Some shacks operate year-round for tours but the boiling and the atmosphere belong to spring.

Honest expectations

The season is genuinely short and weather-dependent, and arriving in May means seeing equipment rather than a boil. The set meal is enormous, heavy and sweet, and repetitive by the end. Larger commercial shacks lay on entertainment and buses; smaller family operations are quieter and better. Grade and quality vary, and syrup sold at airports is usually poor value.
